This salt and pepper shrimp chinese recipe / 椒鹽蝦 hits all the notes - the crisp and crunch of the deep fried prawns coated in spice mix; definitely a crowd pleaser at every meal.

500g Medium shrimps
1 ½ tbsp Rice flour (for dusting)
1 tbsp Minced garlic
1 tbsp Minced ginger
25g Minced red pepper
1 tbsp Chopped scallions
1 tbsp Minced shallots
1 tbsp Chopped scallions (for garnishing)
1 tsp Salt
1 tsp Mixture of white & black pepper
1 tsp Sugar
